Easter Cheese Cake Recipe

Dough for Grandmother's
Cheese Cake or
Country Cheese Cake
Cheese Filling:
6 eggs
2 1/4 cups confectioners' sugar
1 1/2 pounds farmer cheese or ricotta
2/3 cup butter or margarine (at room temperature)
1/2 teaspoon salt
1 1/2 teaspoons vanilla extract
2 teaspoons grated lemon peel
1/4 cup finely chopped candied orange peel
1/3 cup raisins Spread:
3/4 cup thick raspberry jam or strawberry preserves
Directions
Prepare dough for crust; line pan.
Beat eggs at high speed until thickened.
Slowly beat in sugar, beating until mixture piles softly.
Press cheese through a sieve.
Beat cheese with butter, salt, vanilla extract, and lemon peel.
Fold eggs into cheese mixture.
Stir in orange peel and raisins.
Spread jam over bottom of prepared crust in pan.
Turn cheese mixture into pan.
Bake at 325°F 45 minutes to 1 hour or until a knife inserted near center comes out clean.
Cool well before cutting.
