Mint Pea Soup Recipe Video

Easter is just around the corner. In addition to dressing up in bunny suits and hiding colorful eggs for the little ones, we are also trying to figure out what to put together for our Easter meal. I am excited to be joining in my first food battle in preparation for this wonderful meal. It was a silly and fun way to get the creative juices flowing and the result is a great Easter meal that is both healthy and easy to make. I am battling a friend of mine from YouTube named Tony who lives in New York with his wife and two daughters. I am excited to see what he will be bringing to the table. The first course on the Charlie Q Force menu is a magical mint pea soup with real crab meat. This is a dish that you can easily make ahead of time and freezes beautifully in case you want to make it in bulk and enjoy it after Easter is over.

Ingredients

 Leeks1 1⁄2 Cup (24 tbs)
 Frozen peas16 Ounce
 Fresh parsley3⁄4 Cup (12 tbs)
 Fresh mint1 Cup (16 tbs)
 Rice milk1 1⁄2 Cup (24 tbs)
 Vegetable broth3 Cup (48 tbs)
 Salt & pepper1⁄2 Teaspoon
 Real crab meat2 Teaspoon
 Chia twister1 Teaspoon
 Coconut oil milk2 Teaspoon

Directions

MAKING
1. Heat coconut oil in pot. Add leeks and sauté until soft.
2. Stir in peas, stock, mint, parsley. Bring to a boil. Reduce to a simmer and continue to cook for about 15 minutes.
3. Remove 4 tablespoon of peas for garnish.
4. Pour soup into food processor add rice milk and puree. Season with salt and pepper to taste.

SERVING
5. Ladle soup in to soup bowl. Garnish with peas, crab, and chia twister and serve.
