Directions
1. In a small bowl, take warm water. Add dry yeast. Dissolve and Set aside for 5 minutes.
2. In another bowl, beat the egg and pour coconut milk to it. Mix well till incorporated.
3. Add the sugar to this and mix well. Pour the 1 tablespoon oil and stir well. Keep aside.
MAKING
4. In a large bowl, add the 2 cups of flour, ground cinnamon and yeast mixture. Mix well.
5. Gradually pour the egg mixture and the remaining flour alternately and continuously kneading it to form soft dough that is not sticky.
6. Transfer the dough on a flat area and knead it for another 15 minutes till the dough is soft and elastic. If dough sticks to the hands, sprinkle some flour.
7. Cover the dough with a clean napkin and allow rising for 5 minutes.
8. Divide the dough into small balls.
9. Using a rolling pin roll the balls into thick circles. Take a knife shape them as desired (triangle or circle).
10. In a deep pan heat the oil on medium high and fry the Mandazi till golden brown.
11. Drain on a paper towel.
SERVING
12. In a serving plate, serve it warm with any refreshing drink.
TIPS
Variations of this can be made by adding bananas to make banana mandazi or any other flavour of choice.
