Early Season Finnish Soup Recipe

Ingredients
4 small carrots, thinly sliced
1/2 cup (125 mL) each celery and cucumber, diced
1 cup (250 mL) zucchini, diced
1/4 cup (60 mL) parsley, minced
2 tbsp (30 mL) dill, minced
2 tbsp (30 mL) butter
4 to 5 cups (1 to 1.25 L) chicken broth
Directions
Place all the ingredients except the chicken broth, in a 10-cup (2.5 L) microwave-safe bowl. Mix together.
€¢ Cover and microwave 5 minutes at HIGH, stirring twice.
€¢ Add the chicken broth. Add salt and pepper to taste.
€¢ Microwave, uncovered, 8 minutes at HIGH. Stir once during the cooking.
€¢ If desired, place 1/2 teaspoon (2 mL) unsalted butter in the bottom of each soup bowl before pouring the soup.
