Dynasty Duckling Pizza Imperiale Recipe

Ingredients
4 cups cooked rice
1/2 cup ground pecans or hazelnuts
1 egg, beaten
2 1/2 cups (20 ounces) shredded Swiss cheese, divided
1/2 cup grated Parmesan cheese, divided
2 tablespoons olive oil
1 whole Concord Farms® duck breast, halved, boned, skinned and cut into bite-size pieces
1 small sweet onion, cut into thin rings
1 small green pepper, cut into thin rings
1 small red pepper, cut into thin rings
4 ounces fresh mushroom caps, thinly sliced
1/2 cup pitted ripe olives, sliced
1 1/3 cups pizza sauce
1 teaspoon each Italian seasoning, fresh chopped mint and fresh chopped basil
Directions
Preheat oven to 375°F.
Combine rice, pecans, egg, 1/2 CUP the Swiss cheese and 1/4 cup of the Parmesan cheese in large bowl.
Grease 12-inch pizza pan.
Evenly press rice mixture onto bottom and up side of pan to create 1/2 inch rim.
Bake 10 to 12 minutes; set aside to cool.
Heat olive oil over medium heat in large skillet.
Add duck, onion, peppers, mushrooms and olives.
Cook and stir 5 to 7 minutes.
Spread pizza sauce over cooled rice crust.
Layer 1 cup of the Swiss cheese, the duckling mixture, Italian seasoning, mint and basil on pizza sauce.
Top with remaining 1 cup Swiss cheese and 1/4 cup Parmesan.
Bake 15 to 20 minutes.
Let cool slightly.
Garnish as desired.
