Dutch Cordon Blue Recipe

Of all the courses Side Dish happens to be my favorite and Dutch Cordon Bleu the recipe that represents it. I just love Side Dish recipes and this dish is my only favorite amongst them. The European people couldn't have come up with a better dish than this Dutch Cordon Bleu, specially when it comes to culinary creativity. Trust me, once you taste this Dutch Cordon Bleu you are bound to prepare it again!

Ingredients

 
1 pound top sirloin or round steak cut in 4 servings or boneless veal steak or cutlets
 
salt and pepper to taste
 
2 ounces Gouda or Gruyere cheese
 
4 slices boiled ham or proscuitto
 
1 teaspoon butter or margarine
 
1/4 cup beef stock
 
1 tablespoon red wine vinegar
 
1 tablespoon each chopped parsley and chives

Directions

Cut a pocket in one side of each steak, making an opening to within 1/2 inch of the other three sides.
Season meat with salt and pepper.
Slip a slice of cheese and ham inside each steak pocket.
Heat a large frying pan; add butter and steak.
Pan fry until browned; then turn and brown other side.
Remove to a platter and keep warm.
Add stock and vinegar and cook down until slightly reduced.
Add parsley and chives and spoon over meat.
Contains about 340 calories per serving with beef or 250 calories per serving with veal.
