Turn slices into unbaked pie shell.
Blend the egg, cream, and extract.
Gradually add a mixture of sugar, flour, salt, cinnamon, and nutmeg, mixing well.
Pour over apples in pie shell.
Dot with butter.
Sprinkle walnuts over top.
Bake at 450Â°F 10 minutes; reduce oven temperature to 350Â°F and bake 35 to 40 minutes, or until apples are tender and top is lightly browned.
Remove from oven and sprinkle cheese over top
