Dutch Apple Muffins Recipe

1 1/2 Cups Chopped Peeled Apples
1 Cup Raisins or Currants
2 Tsp. Lemon Juice
1/2 Tsp. Ground Cardamon or Cinnamon
2 1/2 Cups All Purpose Flour
1/2 Cup Sugar
1/4 Tsp. Salt
4 Tsp. Baking Powder
2 Large Eggs
1 Cup Whipping Cream
1/4 Cup Butter, Melted or Margarine
Directions
Mix apples and raisins with lemon juice and spice.
Set aside.
In a large bowl, stir the dry ingredients together well.
In another bowl lightly beat the eggs with the cream and butter.
Add to dry ingredients along with the apples.
Stir only until dry ingredients are moistened.
Spoon into greased muffin tins and bake until golden brown.
Bake at 400 degrees about 18 minutes
