Ingredients
1 1/4 cups regular all-purpose flour
1/2 cup sugar
1/2 cup (1/4 lb.) firm butter or margarine
1 egg, separated
1/4 teaspoon vanilla
1/4 cup well-drained, sliced preserved ginger (sliced 1/8-inch thick)
1 teaspoon preserved ginger syrup
Directions
Sift flour and measure; mix in the sugar.
Cut in the butter or margarine.
Beat the egg yolk slightly and stir into the mixture along with the vanilla.
Work dough with hands until smooth.
Roll out on a floured board to about 1/8-inch thickness; cut with a 2 1/2-inch scalloped or round cutter.
Place on ungreased baking sheets.
Press a ginger slice into each cooky center.
Beat egg white with ginger syrup; brush cookies with mixture.
Bake in a 375° oven for 10 to 12 minutes, until lightly browned.
