Legend has it that a maid was making "lechada," a traditional boiled milk and sugar drink, and she forgot all about it. A few hours later she returned to find the pot bubbling with a thick caramel-colored syrup…dulce de leche was born.

GETTING READY
1) Make 2 small holes on the metal cover of the condensed milk cover.

MAKING
1) Put the can of milk in a pan filled with water and let the water boil. Ensure that the required level of water is maintained or the milk will burn. Cook the milk this way for about 4 hours.
2) Once the milk has cooked enough, remove it from the pan and open the metal lid.
3) Put the milk in a bowl and whisk well to remove any lumps that might have formed while cooking.

SERVING
4) Dulce de Leche is the perfect dessert topping for everything from ice cream to custard and even toast. Use the preparation lukewarm, at room temperature or even chilled.
