Ingredients

 
1 6 pound duck
 
1 pound pork, cut into 1 inch cubes
 
1/2 pound mushrooms, soaked and stemmed enough water to cover duck
 
1 onion, quartered
 
1/2 pound small chestnuts, shelled and blanched
 
6 slices ginger
 
1 cup soy sauce

Directions

Chop the duck into 2 inch pieces; wash and dry them carefully.
Place pieces in a saucepan with the pork, mushrooms, onions, ginger and chestnuts.
Add the soy sauce and enough water to barely cover the ingredients.
Bring to a boil and turn down the heat to its lowest point and cover the saucepan tightly.
Simmer for about 2 hours.
Serve the duck, pork and chestnuts in a shallow bowl and pour enough sauce to only half cover the duck.
