24 ducks' tongues
2 slices ginger
1 stalk scallion, cut into 1 inch sections
1 teaspoon salt
1 tablespoon sherry
6 cups chicken stock
1/8 teaspoon pepper
Directions
Place the tongues, ginger, scallion and half of the salt in a bowl.
Place on a rack in a saucepan filled up to 2 inches of water and steam for 1 hour.
Bring the chicken stock to a boil and add the rest of the ingredients with the ducks tongues.
When it comes to a boil, correct the seasoning.
Serve in a deep bowl.
