Duck In Barbecue Sauce Recipe

Ingredients

 
1 crushed garlic clove
 
1 finely chopped shallot
 
2 tbsp oil
 
1/2 cup tomato ketchup
 
2 tbsp vinegar
 
2 tbsp sugar
 
2 tbsp Worcester sauce
 
2 tbsp mild mustard
 
1 tsp cornstarch (cornflour)
 
2 tbsp cognac
 
Salt
 
Pepper
 
2 duck breasts, skin and fat removed

Directions

Put the garlic and shallots in a casserole with the oil and microwave, uncovered, for 1 minute on HIGH.
Add the tomato ketchup, vinegar, sugar, worcester sauce, mustard and 1/4 cup (4 tablespoons) of water.
Mix well.
Microwave, uncovered, on HIGH for 4 minutes.
Mix the cornstarch (cornflour) with the cognac to a smooth paste.
Add to the sauce, mix and cook on HIGH for 1 further minute.
Mix again and leave to cool.
Sprinkle the base of an oval dish with salt and pepper and put in the duck breasts, with the thinnest part of the meat toward the center of the dish.
Pour over the sauce.
Cover and microwave on HIGH for 8 minutes.
