Duck A La Creole Recipe
Ingredients
Fat- 2 tablespoons
Flour- 1 tablespoon
Ham- 2 tablespoons, chopped
Salt, pepper, and paprika- to taste
Onion- 2 tablespoons, minced
Sweet pepper- 2 tablespoons, chopped
Celery- 1/2 cup, chopped
Parsley- 1 tablespoon, chopped
Consommé- 1 1/2 cups
Whole clove- 1
Mace- 1/4 teaspoon
Duck- 2 cups, diced and cooked
Directions
MAKING
1.In a pan, melt fat, add flour and stir in ham
2.Season with paprika, salt, pepper, onion, sweet pepper, celery and parsley
3.Now stir for 2 minutes and then add consommé, clove, and mace
4.Keep simmering for 1 hour
5.Now strain the broth and stir in the duck
6.Remove to a serving plate
SERVING
7.Serve with vegetables
