Duck A La Creole Recipe

Ingredients
| Butter | 2 Tablespoon | |
| Flour | 1 Tablespoon | |
| Ham | 2 Tablespoon, chopped | |
| Onion | 2 Tablespoon, finley chopped | |
| Celery | 2 Tablespoon, finley chopped | |
| Sweet pepper | 2 Tablespoon, chopped | |
| Parsley | 2 Tablespoon, chopped | |
| Salt, pepper and paprika to taste | ||
| 1 c. consomme | ||
| Garlic | 1 Clove (5gm) | |
| Dash of mace | ||
| Duck | 2 Cup (16 tbs) | |
Directions
Melt butter and mix with flour; stir in ham, onion, celery, sweet pepper and parsley.
Season with salt, pepper and paprika.
Cook, stirring constantly, for 2 minutes.
Add consomme, clove and mace; simmer for 1 hour.
Strain; stir duck into mixture.
Cook just long enough to heat thoroughly.
Serve on hominy, rice, mashed potatoes or over toast
