Duck with Potato Dressing Recipe
Ingredients
| Potatoes | 8 Cup (16 tbs) | |
| Minced parsley | 2 Cup (16 tbs) | |
| Celery | 2 Cup (16 tbs) | |
| Nutmeg | 1/2 Teaspoon | |
| Water | 2 Cup (16 tbs) | |
| Duck | 1 8 1/2 Pound | |
| Salt | To Taste | |
| Pepper | To Taste |
Directions
GETTING READY
1) Preheat oven to 450 degrees
MAKING
2) In a saucepan, combine potatoes, parsley, celery, salt, pepper, nutmeg and water and cover
3) Cook this mixture until the potatoes are cooked
4) Clean the duck and stuff it with the potato dressing
5) In a roasting pan, place the duck breast side up and arrange the remaining dressing around the bird
6) Slide it into the oven and bake it for 20 minutes at 450 degrees
7) After 20 minutes, reduce the temperature to 350 and bake till the duck is done
8) You can add hot water if needed
SERVING
9) Serve hot after the bird is out of the oven
