Duck Nicoise Recipe
Ingredients

| Stoned olives - 12 ounce | ||
| Wine | 2 Small | |
| Salt | 1 To taste | |
| Pepper | To Taste | |
| Thyme - as needed | ||
| Tomatoes | 2 pound | |
| Brandy | 2 Small | |
| Garlic | 1 Clove (5gm) | |
| Rosemary - as needed | ||
Directions
GETTING READY
1. Preheat oven to 475 degrees Fahrenheit.
2. Season the duck by rubbing salt, pepper and garlic.
3. Slice olives.
4. Peel tomatoes and cut into quarters.
MAKING
5. Into a soaked Romertopf, place the seasoned meat and add olives,
6. Add olives and tomatoes.
7. Sprinkle rosemary and thyme.
8. Drizzle brandy and wine all over the meat.
9. Cover the pot and cook in preheated oven for about 2 hours.
SERVING
10. Serve Duck Nicois with a green salad.
