Duck with White Wine Recipe Video

10 oz Soy sauce
 
1/2 cup kosher salt
 
Granulated garlic
 
4-5 drops of Hickory Smoke flavor
 
1-2 tbsp Brown sugar
 
2 Tangerine
 
Sesame seed oil.
 
White wine
 
Water
 
Orange marmalade
 
3 tsp honey
 
Grated ginger

Directions

Mix soy sauce, kosher salt, granulated garlic, Hickory smoke flavor and brown sugar in a large pot and let the duck soak into it for 24 hours.

After 24 hours, take out the duck and put it in a roasting pan over a rack.

Stuff 2 tangerines inside the suck and seal it with toothpicks.

Drizzle some sesame seed oil over the duck. Spread the oil with the help of a spoon.

Add some more salt and garlic.

Then pour some white wine in the baking dish and add a cup of water.

Pour a little bit of the brine solution as well.

Preheat the oven to 350 degree F. Cover the baking dish and cook until the legs can be pulled away easily.

3 hours later check the duck.

Take some orange marmalade, 3 tbsp honey, little grated ginger and sesame oil in a bowl. Mix it up.

Apply this paste over the duck.

Preheat the oven to 400 degrees and keep the duck in the oven without the cover.

Heat rest of the orange marmalade mixture in a pan to make a sauce.

Cook until the duck is nice, brown and gets a glaze on it.

Transfer the duck to a platter and enjoy.
