Duck Recipe
Duck! Who doesn€™t love biting into a piece of tender sweet baked and stuffed duck? This duck preparation is simply by far the most delicious one that I have had. Serve the Duck for your family , I am sure they will love it!
Ingredients
1 young duck 4 to 5 pounds
POTATO STUFFING
2 pounds raw potatoes
1/2 teaspoon chopped thyme
2 onions
1 leaf of sage, crumbled
The duck liver, chopped
Salt and pepper
1 tablespoon butter
1 tablespoon goose drippings or beef drippings
Directions
Stuff the duck.
Lard it with the goose or beef drippings.
Put it in a hot oven (400°) for 20 minutes.
Baste it.
Lay the duck on its side so that the legs will cook well.
Reduce the heat to 350°.
After another 20 minutes, baste again and turn the duck on his other leg and leave him so for 10 minutes.
Finish baking the duck on his back so that the breast will get brown.
Time 1 1/4 to 1 1/2 hours.
Lard it with the goose or beef drippings.
Put it in a hot oven (400°) for 20 minutes.
Baste it.
