6 medium-sized potatoes, peeled and cut into large cubes
Hot water
1 teaspoon salt
1 egg, slightly beaten
1/4 cup milk or light cream
4 tablespoons butter or margarine, softened
1/2 teaspoon salt
1/8 teaspoon pepper
Paprika
Directions
In a deep, 2-quart, heat-resistant, non-metallic casserole place potatoes and hot water to cover.
Sprinkle with the 1 tea spoon salt.
Heat, uncovered, on full power 24 to 28 minutes or until potatoes are fork-tender.
Drain excess water.
Partially mash potatoes with a potato masher.
Add egg, milk, butter or margarine, the 1/2 teaspoon salt and pepper.
Beat with electric mixer until smooth.
Place in a heat-resistant, non-metallic serving dish and sprinkle with paprika.
Heat, uncovered, on full power 7 minutes or until 160°F.
Sprinkle with the 1 tea spoon salt.
Heat, uncovered, on full power 24 to 28 minutes or until potatoes are fork-tender.
