Directions
1. Clean and finely slice the leek, then saute in a pan with butter until soft, add the wine, sugar and nutmeg and let it reduce for a few minutes.
2. Pour the sauce into a blender, add salt and pepper to taste, let it run until you have a thick mixture.
3. Drain the pasta and reserve some cooking water, then mix with the sauce; add the pecorino cheese and stir well, If it's too dry, add a little cooking water.
SERVING
4. Serve the Spaghetti Ubriachi along with a glass of red wine.
