Drumstick Leaves Fry (Muringa ila thoran) Recipe
This is a healthy dish made out of drumstick leaves. Moringa oleifera, commonly referred to simply as Moringa, is the most widely cultivated variety of the genus Moringa. The leaves are highly nutritious, being a significant source of beta-carotene, Vitamin C, protein, iron and potassium. The leaves are cooked and used like spinach. In addition to being used fresh as a substitute for spinach, its leaves are commonly dried and crushed into a powder, and used in soups and sauces. Murungakai as it is locally known in Tamil Nadu and Kerala is used in Siddha medicine. Its leaves are full of medicinal properties. The tree is a good source for calcium and phosphorus.
|Drumstick||3 Cup (48 tbs) (tender)|
|Mustard seeds||1⁄2 Teaspoon|
|Urad dal||2 Teaspoon|
|Diced onion/Shallot||1 Cup (16 tbs)|
|Shredded coconut||1⁄2 Cup (8 tbs)|
|Curry leaves||1 Tablespoon|
Heat oil in a pan add to it mustard seeds, urad dal, dried red chillies, a sprig of curry leaves and saute them. Add 1 cup of diced onion along with diced green chillies. When the onions are sauteed well add the drumstick leaves and mix them along with salt and turmeric powder. Close with a lid (This cooks very fast) and cook for 6 to 7 mins. Now add the shredded coconut to the mixture, mix well close and then allow them to cook for another 3 minutes. Serve with rice or roti.
