Drumstick Brinjal Tamarind Curry (Murungai karthirikayi kaara kulambu) Recipe

Ingredients

1. Mixed vegetabeles(Drumstick,Brinjal,Potato) - 1 cup,
2. Tamarind juice - 1 cup,
3. Coriander powder - 4 tsp,
4. Red chilly powder - 3 tsp,
5. Turmeric powder - 1 tsp,
6. Sambar powder - 1 tsp,
7. Onion - 1 (Finely chopped),
8. Garlic cloves - 6,
9. Tomato - 1 (Finely chopped),
10. Salt - as per taste,
11. Vegetable/Gingerly oil - 5 tsp,
12. Sugar - 1/2 tsp,
13. Curry leaves - 2 string,
14. Mustard seeds - 1 tsp,
15. Cumin seeds - 1 tsp,
16. Methi/Fenugreek seeds - 1 tsp.
17. Red dry chilly - 1.

How to make Drumstick Brinjal Tamarind Curry (Murungai karthirikayi kaara kulambu)

1. Heat gingerly oil/vegetable oil in kadai, add mustard seeds, cumin seeds, fenugreek seeds and saute till splatter.
2. Add the onions, garlic, curry leaves, red dry chilly and saute for 2mins.
3. Add the tomatoes and saute till cooked. Now add the vegetables and saute.
4. Put the Coriander, chilly, trmeric,sambar powder and salt. Saute well till the raw smell goes.
5. Now add the tamarind juice and water cover cook the vegetables for 15 mins.
6. Remove lid and stir occasionally. After vegetables are cooked check taste, when the curry thickens add sugar, little gingerly oil.
7. Heat till the curry thickens and the oil floats on top.

Tastes great with White rice combined with boiled egg, papadam, any vegetable saute. Enjoy!
