Directions

Place the butter in an 8-cup (2 L) microwave-safe dish and melt 2 minutes at HIGH.• Stir in the rice until well buttered.
Add the hot water and salt.
Cover and microwave 20 minutes at MEDIUM.
Let stand.
In another microwave-safe dish, place the remaining butter and melt 1 minute at HIGH.
Add the slivered apricots, the quartered dried prunes and the currants.
Stir well.
Add the honey and hot water.
Cover and microwave at MEDIUM-LOW 5 minutes.
Stir, then pour over the hot rice.
Serve.
Serve warm with meat or cool as a dessert with a topping of yogurt.
