Ingredients

 
3/4-lb. dried peaches
 
1/4-lb. dried apricots
 
1 lb. sliced onions
 
21/2 bottles good vinegar
 
1 tblspn, ground ginger
 
2 tblspns, curry powder
 
1/2-lb. seeded raisins
 
1/2-lb. sugar
 
1 tblspn, salt
 
little cayenne pepper
 
2 tspns. mixed spice
 
1 pounded chillie
 
(discard seed)
 
2 tspns. mixed spice
 
2 doz. garlic
 
cloves (pounded)
 
1 tblspn, coriander seed

Directions

Wash and soak dried fruit for 48 hours.
Chop dried fruit, raisins and onions.
Cover with water and simmer until soft.
Add spices while hot.
Add vinegar and boil again until thick and the right consistency for chutney.
Bottle in the usual way.
