Directions

Soak beans or peas overnight in cold water, add onions and salt, and cook until soft.
Put through a sieve.
Make a white sauce of fat, flour, and milk.
If evaporated milk is used, dilute it with an equal quantity of water.
Add the peas and cook until well mixed.
If quick cooking peas or beans are used, soaking is not necessary
