Dried Tomato-Potato Salad Recipe

| Baby red potatoes | 1 Pound, quartered | |
| Tomatoes | 3 Ounce, reconstituted | |
| 1 Leek, trimmed and thinly sliced, white part only | ||
| Light sour cream | 1/3 Cup (16 tbs) | |
| Skim milk | 2 Tablespoon | |
| Basil | 2 Tablespoon, dried | |
| Dill | 1 Tablespoon | |
| 1 clove garlic, minced dash pepper dash salt | ||
Directions
In a large bowl, place potatoes.
Sliver dried tomatoes; reserve 1/2 cup of the tomatoes for dressing.
Add remaining tomatoes to potatoes, with leeks.
Toss gently.
In a food processor or blender place reserved tomatoes, sour cream, milk, basil, dill, garlic, pepper and salt, if desired.
Cover and process until smooth.
Sliver dried tomatoes; reserve 1/2 cup of the tomatoes for dressing.

Toss gently.
