Dried Shrimps And Bean Threads Soup Recipe
Ingredients
| Dried shrimps | 20 | |
| 2 Tbs Chinese rice wine | ||
| Bean threads | 2 Ounce | |
| 1 Tbs peanut or vegetable oil | ||
| 2 stalks scallion, chopped | ||
| Chicken broth | 2 Cup (16 tbs) | |
| Salt | 1/2 Teaspoon | |
| Water | 1 Cup (16 tbs) | |
| Sesame oil | 2 Teaspoon | |
Directions
Soak the dried shrimps in rice wine for at least 30 minutes.
Remove shrimp to a small plate and reserve the wine.
Soak the bean threads in hot water for about 10 minutes.
Drain and cut into 4 inch long (10 cm) pieces.
Heat the oil in the wok, add the drained shrimps and chopped scallion and stir fry for about 1 minute.
Splash in the reserved wine.
Then add the chicken broth, salt, and water and bring to a boil.
Reduce the heat, cover and simmer for 5 minutes.
Add the bean threads to the boiling broth.
Immediately turn off the heat, garnish with sesame oil.
