Dried Fruit Pilaf Recipe

Ingredients
3 tbsp (50 mL) butter
1 cup (250 mL) long grain or parboiled rice
2 cups (500 mL) hot water
1/2 tsp (2 mL) salt
2 tbsp (30 mL) butter
1/3 cup (80 mL) dried apricots, slivered
1/3 cup (80 mL) dried prunes, quartered
1/4 cup (60 mL) dried currants
1 tbsp (15 mL) honey
2 tbsp (30 mL) hot water
Directions
€¢ Place the butter in an 8-cup (2 L) microwave-safe dish and melt 2 minutes at HIGH.
€¢ Stir in the rice until well buttered. Add the hot water and salt.
€¢ Cover and microwave 20 minutes at MEDIUM. Let stand.
€¢ In another microwave-safe dish, place the remaining butter and melt 1 minute at HIGH.
€¢ Add the slivered apricots, the quartered dried prunes and the currants. Stir well.
€¢ Add the honey and hot water.
€¢ Cover and microwave at MEDIUM-LOW 5 minutes.
€¢ Stir, then pour over the hot rice.
€¢ Stir in the rice until well buttered. Add the hot water and salt.
