Ingredients

 
1 onion, peeled
 
1 garlic clove, peeled
 
2.5cm piece root ginger, peeled
 
2 tspn chilli powder
 
2 tspn ground coriander
 
1 tspn salt
 
2 tblspn oil
 
225g mixed dried fruit, excluding prunes, soaked overnight
 
Juice of 1-2 lemons

Directions

Place the onion, garlic, ginger, chilli powder, coriander and salt in a food processor or liquidizer and work to a smooth paste.
Heat he oil in a pan, add the paste and fry for 3 minutes.
Drain the fruit, reserving the liquid, and cut up the larger pieces.
Add to the pan and fry for 2 minutes.
Make up the reserved liquid to 300ml with water, add to the pan and simmer for 30' minutes.
Stir in the lemon juice to taste and serve at once.
