Dried Fruit Compote In Spiced Syrup Recipe
Ingredients
| Dry white wine | 1 1/2 Cup (16 tbs) | |
| Sugar | 3/4 Cup (16 tbs) | |
| Cinnamon stick | 1 | |
| Whole Cloves | 8 | |
| 1 1/4 pounds mixed dried apricots and pitted prunes, coarsely chopped | ||
| Cold water | 2 Cup (16 tbs) | |
| Pure vanilla extract | 1 1/2 Tablespoon | |
| Vanilla ice cream, gelato or creme fraiche, for serving | ||
Directions
In a large saucepan, combine the white wine, sugar, cinnamon stick and cloves and bring the liquid to a boil over high heat.
Reduce the heat to low and simmer for 10 minutes.
Add the mixed dried fruit, cold water and vanilla extract, increase the heat to moderately high and bring to a boil.
Reduce the heat again and simmer over low heat, stirring occasionally, until the fruit is plumped and the poaching liquid has thickened to a slightly syrupy consistency, about 25 minutes.
Remove and discard the cinnamon stick and cloves.
Spoon the warm fruit compote over ice cream, drizzle it with the spiced syrup and serve immediately.
