Dried Apricot Wine Recipe

Directions
MAKING
1. In a large bowl, put together apricots and 6 pints of boiling water; let the mixture cool down.
2. When the mixture is cool, remove apricots and chop them.
3. Return chopped apricots to the bowl and stir in remaining water, grape tannin, pectic enzyme and crushed Campden tablet.
4. Cover bowl and let soak for 2 days.
5. Using a muslin, strain the liquids and stir in sugar, nutrient and yeast.
FINALISING
6. Into a fermentation jar, pour strained liquids and top up with cooled, boiled water if required.
7. Cover tightly with a lid.
8. When the wine is clear, rack into Champagne bottles.
SERVING
9. Serve Dried Apricot Wine in a sleek wine glass.
