Dressed Loin Of Pork Roast Recipe

Directions
Have the butcher crack the back bones of the roast.
Slice the meat to the bone at 1/2-inch intervals down the length of the piece.
Combine bread crumbs and remaining ingredients to make a moist dressing.
Press some of this mixture into each of the cuts made in the meat.
Tie string around roast lengthwise.
Place in open roasting pan and pour 1/2 cup water in the bottom.
If desired, brush meat with prepared mustard or ketchup for extra flavor.
Roast at 325F for about 2 hours, or until the exposed meat slices are thoroughly cooked but still moist.
