Down East Lobster Crepes Recipe

Ingredients
1/4 cup butter
2 tablespoons flour
1 1/2 cups light cream
3 egg yolks, beaten
1/2 pound cooked lobster, chunked
1/4 teaspoon paprika
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup dry white wine
8 crepes
Parsley to garnish
Directions
Melt butter and blend in flour.
Add cream and cook over low heat, stirring constantly, until thickened.
Stir 2 tablespoons hot mixture into egg yolks; then place egg yolks in pan.
Cook over low heat, stirring constantly, until'thickened.
Add lobster, paprika, salt, pepper, and wine.
Place crepes in shallow baking pan.
Fill crepes with lobster mixture and fold over.
Pour remaining sauce over crepes.
Heat in 350°F oven for 15 minutes or until hot.
Garnish with parsley.
