Double-Date Cake Recipe
Would you like to try the best Double-date Cake? Well, then you're going to have to bake it yourself!! No worries...this is not tough. This cake, normally served as a snack, is great for a midday pick-me-up. Made with dates and pecans, and flavored with vanilla, this cake recipe will certainly be loved by all.
Ingredients
Pitted dates - 1 lb., chopped
Butter - 1 cup
Sifted flour - 1 2/3 cups
Soda - 1 tsp.
Sugar - 2 cups
Vanilla - 1 tsp.
Egg - 1, beaten
Salt - 1/4 tsp.
Pecans - 1 cup, chopped
Directions
GETTING READY
1) Grease and paper line an 8-inch square pan.
MAKING
2) In a saucepan, combine half the dates, 1/2 cup butter, 1 cup sugar, vanilla, and 1 cup boiling water.
3) Heat and cook, while stirring, for 10 minutes till the mix thickens.
4) Cool the mix and add in the beaten egg.
5) Stir in the flour, soda, salt and 1/2 cup pecans.
6) Add the batter into the square pan, and spread evenly.
7) Place in the oven at 350 degrees, and bake for 1 hour, till the cake tests done.
8) In a saucepan, add in the remaining dates, butter, and sugar.
9) Add 1 cup boiling water and cook, while stirring, for 20 minutes.
10) Add in the remaining pecans.
11) Cool to lukewarm.
SERVING
12) Spread the date mix over the warm cake.
13) Slice and serve.
