Double Blueberry Pancakes Recipe
Ingredients
1 c. milk
2 tbsp. light corn syrup
1 c. pancake mix
3/4 c. blueberries
1 tbsp. corn oil
1 egg
1/3 c. cottage cheese
Blueberry syrup
Directions
Combine milk, corn syrup, corn oil and egg in mix- ing bowl.
Add pancake mix; stir until dry ingredients are moistened.
Batter will be lumpy.
Stir in blue- berries and cottage cheese carefully.
Pour 1/4 cup batter for each pancake on hot griddle; cook until brown, turning once.
Serve with blueberry syrup.
