Ingredients

 2 medium-size tomatoes, finely chopped
 1 medium-size onion, finely chopped (1/2 cup)
 Celery3 Tablespoon, finley chopped
 Sweet red pepper2 Tablespoon, finely chopped
 Cider vinegar1 Tablespoon
 Salt3/4 Teaspoon
 Pepper1/8 Teaspoon
 Frankfurters8
 4 heat-and-serve sausage links
 8 slices bacon, partly cooked
 8 frankfurter rolls
 Butter/Margarine4 Tablespoon
 Thyme leaf1 Teaspoon, crumbled

Directions

MAKING
1. In a small bowl, combine tomatoes, onion, celery, red pepper, vinegar, salt and pepper and chill it overnight so that the seasoning sets in
2. Slit the frankfurters along the length almost to the end, quarter the sausages along the length and stuff each frankfurter with two quarters
3. Wrap a slice of partially cooked bacon around each of them and secure with damp toothpicks; place them on a grill six inches away from the source of heat and grill for eight minutes, turning over again and again
4. As the meat is cooking, toast the rolls on one side of te grill; place a small saucepan over the grill, melt butter in it, add thyme and use it to brush the rolls

SERVING
5. Serve each of the frankfurters inside the roll with a generous topping of tomato relish
