Double Mushroom Consomme Recipe
Double mushroom consomme is absolutely easy to cook. Serve with fresh mushrooms and top it with some wine and double musroom consomme is good to go. If you are looking for a small get together, you must try out the recipe.
Ingredients
| 2 large dried mushrooms, softened in water to cover with a pinch of sugar | ||
| 6 cups chicken, beef and or veal broth | ||
| 3 green onions and tops, slivered | ||
| Mushrooms | 1/2 pound, minced | |
| Fresh lemon juice | ||
| Dry white wine | ||
| Salt | To Taste | |
| White pepper Thinly sliced fresh mushrooms, rubbed with fresh lemon juice | ||
Directions
Dice softened dried mushrooms and combine with broth, green onions and fresh mush rooms.
Cover, bring to boil, lower heat and simmer 45 minutes.
Strain, pushing as much pulp through sieve as possible.
Season with lemon juice, wine, salt and pepper and garnish with sliced mushrooms.
