Dorset Apple Cake Recipe

Ingredients
2 medium eating apples
1 stick butter
1/2cup sugar
1 egg
2 cups all-purpose flour
1 1/2 teaspoons baking powder
a pinch of salt
FILLING AND TOPPING
6 tablespoons butter
1/2 cup soft light brown sugar
DECORATION
blanched almonds
Directions
Pare and core the apples.
Cut them into quarters and then chop coarsely .
Put to one side.
Cream the butter and sugar unril light and fluffy .
Add the egg, and cream the mixture for 10 seconds.
Sift together the flour, baking powder and salt.
Add to the creamed mixture and mix for a few seconds until incorporated.
Stir in the chopped apple.
Put the mixture in a greased 8-inch round deep cake pan, and bake at 350°F for 50 minutes.
Cool on a wire rack.
After lOminutes, split the cake horizontally with a sharp knife.
To make the filling, cream the butter and brown sugar until light and fluffy .
Spread half the mixture between the cake layers, and use the rest to spread on top.
Decorate with almonds.
Eat freshly baked.
