Ingredients

 
1 lb (450 g) dore fillets, fresh or thawed
 
Salt and pepper
 
3 tbsp (45 ml) green onions, chopped
 
2 tomatoes, cut into wedges
 
1/2 tsp (2 ml) sugar
 
1/4 Cup (60 ml) melted butter
 
1 lemon, sliced
 
1/4 tsp (1 ml) basil
 
2 tbsp (30 ml) chopped parsley

Directions

–  Preheat oven to 450 °F (230 °C).
–  Remove skin from the fish. Butter a baking dish, arrange fillets over the chopped green onions in dish, season with salt and pepper and set aside.
–  In a bowl, gently mix tomatoes and sugar. Place them around the fish, baste with melted butter and bake for 10 minutes.
–  Place in a serving dish, garnish with lemon slices, sprinkle with parsley and basil and serve.
