Directions

In a small bowl, marinate the carrot in all the carrot marinade ingredients for an hour.
in another bowl, mix the green onion marinade ingredients and keep aside.
In a bowl, mix all the sauce ingredients and keep aside.
In a pan, saute the spinach and garlic in oil. Sprinkle salt to taste and remove from the pan. Saute the mushrooms and add the green onion sauce.
Coat another small non-stick pan with sesame oil. On a low heat, press in the cooked rice. Arrange the marinated carrots, spinach, mushrooms
over the rice. Increase the heat and add 2-3 tablespoons of the hot sauce. Tear and place the lettuce leaves. Top with the sunny side up and dot with the hot sauce.
