Ingredients

 
7 oz finely chopped onions
 
3 1/2 oz lean bacon, cut into thin strips
 
2 tbsp oil
 
1 3/4 lb finely grated fennel
 
14 oz pureed tomatoes
 
2 crushed garlic cloves
 
1/2 tsp thyme
 
Salt
 
Pepper
 
3 tbsp white wine
 
1 3/4 lb dogfish
 
3 tbsp sour cream (creme fraiche)

Directions

Put the onion, bacon and oil into a dish and microwave, uncovered, on HIGH for 3 minutes.
Mix together the fennel, tomatoes, garlic, thyme, salt and pepper.
Pour into the dish on top of the onions.
Add the white wine.
Cover and microwave on HIGH for 5 minutes.
Rinse the fish under plenty of cold running water and pat dry on kitchen paper.
Cut the fish into 4 equal pieces.
Stir the sour cream (creme fraiche) into the vegetable mixture.
Stir well.
Put the fish on top of the vegetables.
Cover and microwave on HIGH for 3 minutes.
Turn the fish over.
Cover and microwave on HIGH for a further 3-4 minutes, depending on the thickness of the slices.
Leave to stand for 3 minutes.
