There's no such thing as Italian dressing in Italy. There, salads are dressed simply at the table with Italian Balsamic Vinaigrette that has the extra-virgin olive oil, vinegar or lemon juice, and salt and pepper.The secret of a well-dressed salad is to use just enough dressing to coat each leaf with no puddles of dressing left in the bowl.
Ingredients
Ranch Dressing Ingredients:
1 garlic clove
1/2 teaspoon salt
1 tablespoon minced yellow or sweet onion, optional
1 cup mayonnaise
1 cup buttermilk
1 tablespoon finely chopped flat-leaf parsley
1 tablespoon finely cut fresh chives
Black pepper, to taste
Italian Balsamic Vinaigrette Ingredients:
2 cloves minced garlic
1/3 cup balsamic vinegar
2 tablespoons fresh lemon juice
1 1/2 tablespoons Dijon mustard
1 1/2 tablespoons minced flat-leaf parsley and chives
1 cup extra-virgin olive oil
1/2 teaspoon salt
Black pepper, to taste
Directions
Ranch Dressing:
1) Finely chop the garlic and mash it together with the salt to make a paste. Scrape it into a medium bowl and add the onion.
2) Add the mayonnaise, buttermilk, parsley, chives and black pepper to taste. Whisk together to combine well.
3) Taste by dipping a Romaine leaf into the dressing. Adjust seasoning with salt and pepper, if needed. Cover and refrigerate.
Italian Balsamic Vinaigrette:
1) Put all the ingredients into a 1-quart screw-cap jar, put on the lid and seal it, and shake well for 30 seconds to 1 minute.
2) Taste by dipping a piece of torn leaf lettuce into the dressing. Adjust the seasoning as necessary. Refrigerate for up to 1 week.
3) Shake well before using. Feel free to add cherry tomatoes, sliced cucumber, or whatever else you like.
