Dixie Relish Recipe
Ingredients
| Cabbage | 1 Quart, chopped | |
| Onions | 2 Cup (16 tbs), chopped | |
| 2 cups chopped sweet green peppers | ||
| 2 cups chopped sweet red peppers | ||
| Salt | 1/2 Cup (16 tbs) | |
| Cold water | 2 Quart | |
| Sugar | 3/4 Cup (16 tbs) | |
| Mustard seed | 3 Tablespoon | |
| Celery seed | 2 Tablespoon | |
| Vinegar | 1 Quart | |
Directions
Dissolve salt in 2 quarts cold water.
Pour over chopped vegetables and let stand 1 hour.
Drain.
Add vegetables, sugar and spices to vinegar; simmer 20 minutes.
Bring to a boil.
Pack hot into hot jars, leaving 1/4-inch head space.
Adjust caps.
Process 15 minutes in boiling water bath.
