Ingredients

 Sugar2 Cup (16 tbs)
 Corn syrup1/2 Cup (16 tbs)
 Water1/2 Cup (16 tbs)
 Cherries3/4 Cup (16 tbs), candied
 Egg whites2
 Blanched almonds3/4 Cup (16 tbs)
 Almond or lemon extract- 1 tablespoon

Directions

MAKING
1.In a saucepan, put the sugar, water and corn syrup
2.Stir it while it dissolves over the fire, then let it boil without stirring to the light crack stage (265° F.)
3.While it is cooking, beat the whites of eggs stiffly and when the syrup is ready pour it over them, beating constantly
4.Beat until creamy, add nuts, cherries and extract, and pour into buttered tins
SERVING
5.Serve warm
