Divinity Recipe
Ingredients
| Sugar | 2 2/3 Cup (16 tbs) | |
| Light corn syrup | 2/3 Cup (16 tbs) | |
| Water | 1/2 Cup (16 tbs) | |
| Egg whites | 3 | |
| Salt | 1 Pinch | |
| 3/4 cup unsalted chopped nuts | ||
Directions
Combine sugar, corn syrup, and water in 2-quart glass measure or micro proof bowl.
Cook on HI, 12 to 15 minutes, or until micro-wave candy thermometer registers 260°F (a small amount of mixture will form a ball hard enough to hold its shape but it will remain pliable when dropped into bowl of very cold water).
Meanwhile, beat egg whites with salt in large bowl until stiff.
Gradually pour hot syrup into whites, beating constantly until mixture is very stiff, about 2 to 3 minutes.
Stir in nuts.
Drop by tablespoonfuls onto waxed paper.
Let cool completely.
Store in airtight container in cool place.
