Dinner Party Skewers Recipe
Ingredients
1/4 cup (50 ml) molasses
1/4 cup (50 ml) vinegar
1 tbsp (15 ml) tomato paste
3 anchovy filets, chopped and mashed
1 large pork tenderloin, sliced thick
2 large celery stalks, in 1 in (2.5 cm) lengths
1 large green pepper, in bite-size pieces
1 seedless orange
Juice 1/2 lemon
Juice 1 orange
Directions
Preheat oven to 500°F (260°C).
Mix molasses, vinegar and tomato paste together in large bowl.
Add lemon and orange juices, anchovies and mix very well.
Place pork, celery and green pepper in marinade; set aside 1 hour on countertop.
Slice other orange in two; cut each half into 1/4 in (0.65 cm) thick slices.
Do not peel.
Alternate double slices of orange along with ingredients in bowl on skewers; place on ovenproof platter.
Cook 14 minutes, turning skewers over once.
