Dilly Chicken salad Finger Sandwiches Recipe
Ingredients
1 1/2 cups finely chopped cooked chicken or turkey breast
1/2 cup finely chopped celery
1/4 cup grated carrot
2 tablespoons finely chopped onion
1 tablespoon minced fresh dill, or 1 teaspoon dried
2 tablespoons nonfat or reduced-fat mayonnaise
2 tablespoons nonfat sour cream
16 slices firm whole wheat, rye, or pumpernickel bread
Directions
1. In a medium-sized bowl, combine the chicken or turkey with all of the remaining ingredients except the bread. Stir to mix well, adding more nonfat sour cream if the filling seems dry.
2. Place 1/4 cup of filling on each of 8 slices of bread. Top each slice with 1 of the remaining slices, making 8 sandwiches. Trim the crusts from the bread, and cut each sandwich into 4 fingers.
