Dill Shrimp Recipe
Ingredients
3/4 pound medium-size shrimp, peeled and deveined
2 lemon slices
1 bay leaf
3/4 cup water
1/4 cup tarragon vinegar
1/4 cup minced fresh dill or 2 tablespoons dried dill
2 scallions, chopped
1 small stalk celery, minced
1 head Boston lettuce
Directions
Place the shrimp in a medium-size saucepan with the lemon slices, bay leaf, and just enough water to cover.
Bring to a boil, then reduce heat and simmer until the shrimp are opaque and cooked through, about 2 minutes.
Drain the shrimp and place them in a medium-size bowl with the 3/4 cup of water, the vinegar, dill, scallions, and celery.
Marinate for at least 24 hours.
Drain the marinated shrimp.
Place lettuce leaves on a serving plate and arrange the shrimp on top.
