Dill Pickle Recipe
Dill pickle recipes is essential just called as Pickle recipe,made with cucumber.It is pickled in vinegar,brine & other liquids.Pickle recipes are very popular in India & constitute a very large part of Indian cuisine.

Ingredients
| Vinegar | 1 Quart | |
| Water | 2 Quart | |
| Pickling salt | 3⁄4 Cup (12 tbs) | |
| Dill heads | 2 | |
| Garlic | 1 Clove (5 gm) | |
| Hot red pepper | To Taste |
Directions
In a bowl mix vinegar,water & salt & bring it to boil over medium heat.Wash cucumbers well in running cold water. Discard any with bruised skins.Wash and sterilize jars and rings before use. Bring lids to a simmer for 1 minute in a small saucepan.Stuff jars with cucumber,add 1 clove garlic & 1 red pepper.Pour boiling hot vinegar solution over cucumbers in jars. Seal. Process in boiling water bath 5 minutes.
Tightly close the jars & set aside for half an hour atleast.

A piece of horseradish in a jar will keep the pickles crisp and adds to the flavour. Dill Pickles are much better when left for at least 6 months before chilling, opening and eating. According to the Ball Blue Book of Canning you should water bath process for 10 minutes which is what I have done for years. Is 5 minutes adequate and safe for proper sealing?
